Background:
Project Origin’s CM Selections are carbonic macerated coffee lots from across the globe.
This “Indigo” project chose a unique coffee from Ethiopia that signifies deeper and richer tasting notes in the cup reflecting the likes of red cherry, raisin, concord grape and plum as a result of the extended fermentation of this coffee.
Coffee cherries are hand-sorted and only the perfectly ripe ones are picked. Then cherries are floated to remove over-ripe and under-ripe cherries. This natural coffee, in particular, is placed in the tanks still in whole cherries, the temperature-controlled tanks are flushed with CO2 where an extended anaerobic fermentation takes place amplifying the already complex flavours of this coffee.
We aim to roast this coffee in a way that transparently showcases the unique flavours of this coffee while still allowing it to be approachable for everyday drinking.
