It's a mix of high density washed and natural processed coffees which allows nice complexity whilst giving the bass to the music. Roasted medium/well done, its nicely caramelised which helps give milk chocolate creamy vibes with a cocoa/malty, smooth, lingering finish.
50% of the Peru component is a highly dense, washed processed coffee from the city of San Ignacio, from the Bosque Verdes Co-operative via Zest Coffee's relationship with them. It's sugary, mild citric, crisp characteristics give a great balance in the cup. "250 small, 1-2 hectare farms that make up this co-operative. Each hectare contains around 4000 coffee trees, each producing about 3kg of coffee cherries per year. After pulping, washing, drying, hulling and removing all the defects, the yield of each tree is just 400g of green coffee beans."
50% is also from Pocos De Caldas, a municipality in the state of Minas Gerais, Brazil. In Pocos De Caldas, many of the farms are scattered along slopes of one of the most volcanic rich Calderas (Caldas) in the world. This naturally processed Mundo Novo varietal has a great cocoa, malt, clean nut quality which gives it a nice creamy texture in the cup.
