This is a good example of the nicely processed pink bourbon variety coffee Huila is becoming known for. Once picked and pulped it is fermented in a sealed tank for 48-72 hours (depending on the temperature). It is then dried slowly for 20-22 days.
This is our first single origin from the legendary Colombian importing/exporting company Osito. This is one of the first lots on their first container to land in Australia. Because they own the whole supply chain their coffee is more traceable.
This is quite a clean single varietal high altitude (1800masl) coffee, with clear lime acidity upfront that makes it very easy to drink especially as an iced black coffee. The processing and altitude of this coffee lower its complexity but make the flavours quite easy to distinguish and sweeten greatly as it cools.
Oscar is a member of the Divino Niño producer coop, we'll be featuring their consolidated lot as well as other members this year. It's a rapidly expending group with it's members doubling in size the last few years.
