José is a second-generation coffee producer. He was one of the first to focus on producing specialty coffee in the municipality of Buesaco, Nariño. He owns Los Angeles, a 6-hectare farm located at 1,890 m.a.s.l in Buesaco, Nariño, 4 out of 6 hectares are assigned for coffee cultivation and he mainly grows Gesha variety.
Jose started to grow this variety in 2013. After three years of caring for the crops, he could see the great performance of the Gesha variety in his farm. This is mainly due to the right altitude and climate conditions but also thanks to the care and innovative processes in the pre and post-harvest. Los Angeles farm is also an experimental centre where José experiments constantly with his coffees, in this way he can provide amazing coffee profiles.
This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.
