    Background:

    This coffee was exposed to a dry aerobic fermentation of 24 hours; before being placed inside airtight Grainpro bags for 50 hours, all while being kept below 22°C. This low temperature prevents overfermentation which causes undesirable "funk" notes. The whole cherries were then placed on raised beds to dry until 11% moisture content was achieved.

    This micro-lot is 100% Java. This famous variety originated in Ethiopia and is a natural mutation of Typica. The seeds were taken to Indonesia where it was named Java after the island, in 2010, the variety made its way into Colombia and was planted at this farm.
