    Background:

Produced by indigenous growers from Aponte, Nariño who are members of La Cooperativa de Cafes Especiales de Nariño. Producers contributing to this product grow coffee above 1700 MASL and their farms range in size between 0.5-1.5 hectares.

In Aponte, producers have mastered the art of Honey processing as they have been producing Honeys for 3 consecutive years now. Growers production is very small and relative humidity is low, this facilitates the process as not much space is required, and coffees dry much faster compared to other coffee producing regions. Producers process coffee on their own properties, drying Honey coffee in stacked raised bed solar dryers on their farms. This process reduces water used for washing coffee and complements the natural complexity of coffees from this special region.

This microlot coffee is 100% castillo which is a hybrid variety that now makes up 40% of Colombia’s coffee crops. It is a “dwarfed” tree that can be planted in high density, resulting in generous crop yields.
